Beluga caviar is the most expensive type of caviar. This caviar is obtained from Beluga elephant fish (Huso huso) eggs. Beluga elephant fish is mainly found in the Caspian Sea, which is shared by Iran, Azerbaijan, Kazakhstan, Russia and Turkmenistan. It is also found in the Black Sea basin and sometimes in the Adriatic Sea. Beluga caviar is highly prized for its soft, very large (pea-sized) eggs that range in color from light silver-gray to black.
